【摘要】:ThisInternationalStandardspecifiesamethodfortheiodometricdeterminationoftheperoxidevalueofanimalandvegetablefatsandoilswithavisualendpointdetection.Theperoxidevalueisameasureoftheamountofoxygenchemicallyboundtoanoilorfatasperoxides,particularlyhydroperoxides.Themethodisapplicabletoallanimalandvegetablefatsandoils,fattyacidsandtheirmixtureswithperoxidevaluesfrom0meqto30meq(milliequivalents)ofactiveoxygenperkilogram.Itisalsoapplicabletomargarinesandfatspreadswithvaryingwatercontent.Themethodisnotsuitableformilkfatsandisnotapplicabletolecithins.Itistobenotedthattheperoxidevalueisadynamicparameter,whosevalueisdependentuponthehistoryofthesample.Furthermore,thedeterminationoftheperoxidevalueisahighlyempiricalprocedureandthevalueobtaineddependsonthesamplemass.Itisstressedthat,duetotheprescribedsamplemass,theperoxidevaluesobtainedcanbeslightlylowerthanthoseobtainedwithalowersamplemass.
